Mexican Corn + Cheese Salad for Veggie Taco Night





Taco night. Ahhh, taco night. You make me smile. At our house, we love taco night. Typically, we'll do shredded chicken (from the crock pot) or ground turkey as the main ingredient for the tacos, but every once in awhile we prefer to go meatless and let the beans (black or pinto or refried, we love them all!) steal the show. But that means beans can't be our side dish... so over the weekend we tried this Mexican corn + cheese salad as our side dish and boy, we loved it. Like, taco night just got better.

INGREDIENTS:

one can of unsalted yellow corn + one can of unsalted white sweet corn 
(or you could use fresh corn for a much fresher taste! we used what we had in our pantry for this meal)

half of a medium red onion (or less if you prefer)

1/2 to 1 Teaspoon of chili powder (to preference)

1/4 cup of cilantro leaves

1/2 cup of Feta cheese

2 Tablespoons of mayonnaise

olive oil

salt + pepper 


DIRECTIONS:

1. Sautee corn in olive oil until parts "char" or blacken. Side note: this turned my non-stick pan into a mess, make sure you add water to it while hot once the pan is emptied!

2. Cool corn in the fridge for 15-20 minutes. 

3. Chop the onions and cilantro into small pieces.

4. Add all remaining ingredients to cooled corn and stir. Add a dash of salt and pepper, to taste.

Summertime All-White Bedding




I am a huuuuge fan of all-white bedding. Partially because there are millions of cute duvet covers in the world and I could never choose my favorite, but mostly because sinking into an all-white bed at the end of the day feels like paradise. In our master bedroom, we've got white sheets, a white duvet and a white bed skirt (does anyone ever still call those "dust ruffles?" If not, we should start. That and "pocketbook" should definitely make a comeback). In the winter time, we opt for heavier weight sateen sheets but in the summer we use crisp white cotton sheets that are super cool and refreshing. Needless to say, there's something to be said for a pretty pillow that can make me break my "all-white bedding" rule and I think these cornflower blue print pillows do the trick! The pillows are from Macy's partnership collection with the talented floral homegoods designer bluebellgray. Also, I realize that Euro shams are typically placed in the very back of the pillows on a bed, but I saw Sarah Richardson stack the Euros in the front like this once and I thought, well, if she can do it, so can I! It's also the lazy girl's way to making the bed, just pull up the cover and smooth out the sheets, stack the head pillows and then cover up with the Euro pillows! Boom.

And in case you're wondering what the rest of my master bedroom currently looks like... 



...no, we still have not painted those Ikea Rast nightstands that I picked up, oh, like five years ago. I did add some sweet knobs though, although somehow they've only ended up on David's nightstand and not mine thus far. It's like I've got two kids, a full-time job, a husband and I'm designing and building a house or something?! Knobs are the priorities, Michelle, get with it!

And the other side of the room is also in status quo, looking pretty and fresh with a white dresser, mixed metal elements and my favorite lamp ever. More on that space and vignette here.


Of course, this is just a rental house for us, so we cannot wait to make the move from a transitional master bedroom to our permanent room at the new house. We may even go buck wild and buy a real bed instead of using just a frame! #growingup

Farm Trees + Tire Swings


Out at the farm, we have a LOT of trees. We have two cleared pastures (or as HDawg says "pastras") that are 3-4 acres each, but the rest of the 17 acres is wooded. Yes, a ton of trees! David initially started clearing the scrub trees/vines/weeds out with an axe. Like, an old school hatchet. Seriously. Can you imagine how that went? "Honey, I'm headed out to the pastra with ma axe. Ring the dinner bell when it's time for me to come in." HA. But, those days are no longer thanks to my good friends at ACE Hardware. As a house warming gift... er, a farm warming gift?!... they sent us this bad boy.


I never thought I'd be excited about a chainsaw, but when you have so many trees and a HATCHET for crying out loud, a chainsaw is a must. Don't get me wrong, I'm quite the tree hugger and hate cutting trees down, but we have a lot of overgrowth on our property that needs to be tended to. When the "scrub trees" take over the good trees, the good trees will die. So in order to preserve the quality trees, you've got to cut down the junk. Make sense?


My man hard at work, people. With his CHAINSAW CHAPS on. That's a thing. They actually protect your legs from dangerous cuts, so they're kind of important. Way to be, chainsaw chaps.

And the really fun part is that once we cleared some junk out from around and under a group of trees in what will eventually be our "front yard," we had enough room for a tire swing! Read: all of Michelle's life goals are now complete, my kids have a tire swing. I can only imagine the hours of fun and time we'll spend out here under these big sassafrass and dogwood trees, playing on the tire swing.
